Tailoring Food: Chicken & Cannelloni Bean Soup
Starting 2022 off as we mean to go on - with fresh and healthy mealtimes! 🥣
This is a chicken and cannelloni bean soup using some of the chicken leftovers from yesterday - super quick and easy to make and delicious too! I need to cut body fat along with about 2.5kg over the coming month - and knowing a lot of clients and followers will be looking to lose weight in the New Year I want to share what I’m doing on my own weight loss journey.

Rough Ingredients to serve 4 (or two super hungry people): -
- half diced large onion 🧅
- three sliced Echalion Shallots (or leeks if you prefer)
- one diced medium size potato 🥔
- two sliced and diced carrots 🥕
- handful or two of leftover chicken, shredded 🍗
- one tin of cannelloni beans drained and rinsed
- salt and pepper 🧂
- teaspoon of dried thyme 🌿
- 850ml chicken stock
- fresh parsley chopped 🌿 (set aside for later)
Method:-
1. Add the ingredients to a pot or saucepan and stir together, bring to a gentle simmer
2. After 25-30 mins take it off the heat and leave to cool down a few minutes while you prepare some bread for dipping 🥖 🤤 and chop the parsley 🌿
3. If you prefer a slightly more smooth texture rather than a chunky soup, use a hand blender to give the soup a whizz till you get to your desired consistency. I just went for 10 secs to get the consistency you see in the pic
4. Pour into bowls and garnish with the parsley and a squeeze of fresh lemon 🍋
5. Enjoy!!
Eating more veg is a big challenge in our household so this is a great way to ramp up the vegetable portion with just a touch of meat, wonderful flavours to make everyone happy! 👌
